Lets have a party at Derek's just so he doesn't feel all by himself over there.Hickory smoked mackerel and pork ribs today...soaked them in a seasoned beer brine overnight and sucked back a half a bottle of Jack while I labored over the smoking process today.
Actually turned out quite good.

Derek, next time I am out your way - LOL! Or, you are out my way - dinner man - you can be my tutor chef. My youngest son just returned from EU is making baked back ribs - 4 hours (low heat) in the oven covered with BBQ sauce - then under the broiler with beans and beer to wash it down. I'll take a pic and send - maybe some cole slaw as well and baguettes to sop up the juices.
