If it is a project brakes may be way down on the list to do however they will have to be done.
Why not just bite the bullet and do the brakes first? If the car is inside rust is really not an issue and you can always take them apart for a quick clean before the first drive. Just a thought.
those types are allot around for sale new. I have used cross drilled/slotted rotors came with ceramic pads. Actually for what you need just get cheap coated with zinc rotors so they wont rust out just sitting.
