When reinstalling the roof panel recently, when latching the driver's side, I heard a crack sound followed by a piece of the latch roller landing on me.
Some Googling and reading on other forums infomed me that 2005-2007 use a roller on the latch and that the design was updated in 2008 with a solid beveled piece in place of the roller. It also seems that the updated design is less prone to creaking, and GM dealers were even replacing latches with the updated design when customers complained of creeking.
I opted to replace the latches and went with this seller on Ebay. The latches appear to be as described, and are near identical to the originals except for the updated block.

The latches use a T-25 bolt, and I torqued the new latches to 13-lb ft. Here are the new latches attached to the roof panel along with the new o-rings. I had previously added heat shrink over the pins and replaced the o rings with 2 sets to limit creaking.
After reinstalling the latches feel tight and there is no noticable creaking from the roof.
